Today’s post will be about sizzling cake- Banh xeo. It’s a very popular snack in the evening for the Saigon-ers. You can call it “pancake” because it’s somehow similar to real pancakes: both are fried by mixing water with different kinds of flour, with some addition ingredients.
To be more detail, Banh xeo is made of rice flour, coconut milk, turmeric powder, with porks, shrimp and bean sprouts inside. When eating, we roll it with lettuce leaves (and some other leaves) and dip it in sweet and sour fish sauce (which is, obviously, more sweet and sour than normal salty sauce).
The process of making this cake is pretty easy. Flour,coconut milk and turmeric powder: mix together. Put the mixture into a large pan, try to gently shake the pan so that the flour is evenly spread out and as thin as possible. The thinner the flour is, the more giòn the cake will be later. Put the lid on for, say a minute, and then put in boiled shrimp, pork, beans. Fold the cake. Doneee!
